Dragon Fruit Smoothie Bowl (No Banana)

Ingredients
  

Smoothie Base

  • 1 cup frozen dragon fruit
  • 1 cup frozen mango
  • 1 cup frozen strawberries
  • 1/2 cup full-fat coconut milk

Toppings

  • 1 tbsp chocolate chips
  • 1 tbsp chia seeds
  • 1/2 cup diced dragon fruit

Instructions
 

  • Chop dragon fruit, mango, and strawberries into dice-sized cubes, or whatever small shape you prefer, and freeze them solid. (Optional: Use the store-bought frozen fruits if you don't want the hassle)
  • Add the frozen fruit and half a cup of full-fat coconut milk to a blender or food processor bowl. Feel free to gradually add the coconut milk to nail the consistency.
  • Blend or process until the fruits are broken up. Continue to process until you have soft ice cream consistency that is both thick and creamy.
  • Fill a bowl with the dragon fruit smoothie and top with chocolate chips, dice-sized cubs of dragon fruit, and some chia seeds for your daily dose of Omega-3 fatty acids. Feel free to add whatever toppings you may like.

Notes

  1. Since I'm able to find these fresh fruits at a very affordable price, I don't see the value in buying them already frozen. I'm aware that fresh dragon fruits in the States are hard to come by, so by all means, get yours frozen.
  2. Be conservative when adding the coconut milk as you don't want the texture or consistency to be TOO creamy.
  3. I've used three different toppings, but feel free to go wild and use seven if you like! I stuck to a semi-healthy combination. :)
